Super Easy Gluten-Free Sweet Potato Fries

Healthy Sweet Potato Fries that go well with any dish or just to eat as a healthy snack

- 1 Medium Sweet Potato
- 2 tbsp Olive Oil
- ½ cup Rice Flour
- 1 tsp Salt
Preheat oven to 400°
Wash and peel (optional) the sweet potato
Cut sweet potato into slices about 1/2 inch wide and 4 inchs long (about the sizes of traditional fries)
Drizzle olive oil over the sweet potatoes getting a nice layer on each individual piece
Then toss the slices in rice flour, coating each piece thoroughly
Line baking sheet with parchment paper
Place coated sweet pototoes flat on the baking sheet
Sprinkly salt evenly over the fries
Bake for 25 minutes and flip over for 5-10 minutes, until golden brown.
