ALMOND BUTTER BLONDIE BITES

These cute little Blondie Brownie Bites are so easy to make and trust me… no one will be able to tell they are Gluten, Sugar, and Dairy Free. They mix up really quickly and with using Almond Butter as the base, they can be very filling as well.

If you have a little sweet tooth and don’t want to overindulge, Almond Butter Blondie Bites have the right amount of sweetness, to cut right to those cravings.

Chia Seed Powder

There are a few things that can be substituted for eggs as a binding agent and Chia Seed Powder is great for that. With those of us on an autoimmune diet, seeds can be a little problematic for some. Which is why I used sprouted seeds.

Sprouted seeds have been proven to be much easier on the digestive system. They have anti-nutrients making it easier for your body to absorb all the nutrients they contain. It’s best to use sprouted chia seed powder for this recipe, although you don’t have to, you can use the regular chia seed powder. And, good luck trying finding ‘sprouted’ chia seed powder though. But I found a way around that…

My best recommendation for that is to buy Pure Living – Organic Sprouted Chia and after trial and error, I have learned you can blend the seeds to make powder, duhhh. Place the seeds into the blender and Voila! Now, you have sprouted chia seed powder.

Sugar-Free Chocolate Chips

I have looked high and low for the best sugar-free chocolate chips. This has not been an easy task! I want flavor along with quality and not a bunch of chemical substitutes or soy. Oh yeah… and I don’t want to pay an arm and a leg for sugar-free chocolate chips.

And, I believe I’ve found them! Bake Believe All Natural Baking Chips are aaaammmmazing. Made with stevia and other simple ingredients, these bad boys can be found at Walmart for like $4! Which is half of the price of other sugar-free trendy chocolates out there.

I recommend the semi-sweet ones… I like those the best and they give these Blondie the perfect amount of sweetness. Hence why I said stevia is optional in the recipe.

Most brownies are the best when eaten right out of the oven and hot. But these Blondies need to be cooled off before eating because they will fall apart. Let them cool or toss them in the fridge and eat the next day. To be honest… they are actually a lot better the day after (I eat them for breakfast) with a nice cup of  Roasted Chicory Root Coffee! Almond Butter Blondie Bites

Quick and easy blondies that whip up in no time and are delicious. You won't even be able to tell there is no flour, sugar or even dairy in these cute little brownie bites. Everyone will love them... even those who aren't on a limited diet.

Equipment

  • Oven
  • Mixing Bowl
  • Measure cups and spoons
  • Oven safe 9x7 inch baking dish

Ingredients
  

  • 1 tbsp Ground Chia Seed Powder
  • 3 tbsp Water
  • 1 cup Creamy Almond Butter
  • 1 tsp Vanilla
  • ¼ tsp Baking Soda (lower elevations use 1/2 tsp)
  • ¼ tsp Salt
  • Dash of Stevia (optional if you want sweeter Blondies)
  • ¼ cup Sugar-free Chocolate Chips (Bake Believe Chocolate Chips has the best flavor and sweetness)

Instructions
 

  • Preheat oven at 350°
  • Mix 1 tbsp of water with 3 tbsp ground chia seed powder
  • Add 1 cup almond butter, baking soda, vanilla, salt and mix well
  • Add chocolate chips and stevia to the Almond Butter batter
  • Line baking pan with parchment paper
  • Place Almond Butter Blondie batter into baking dish and smooth out evenly
  • Bake for 20 minutes
  • Take Blondies out of baking pan (optional: gently pat down for a heavier brownie consistancy)
  • Cool and then cut into 1 inch blondie brownie bites
